Our Organic Split Shell Pistachio Kernels are from a farm in California which has specialized in growing and handling pistachios since 1976. The farm has been family owned and operated for four generations.
Most pistachios split naturally on the tree, and are harvested that way. These pistachios are steam pasteurized according to Organic guidelines, then dried in shell at 180 °F for 4-5 hours to bring the moisture level down to 3-4%. There are no definitive studies to say what temperature the nuts themselves reach.
